When you hear the word ‘pancake’ you think of a soft, round morsel that practically melts in your mouth. But the scrumptious Sri Lankan pancake is more like a sweet crepe than an actual pancake. This heavenly concoction is packed with exquisite taste. Each bite of it will leave you craving for more. It is super soft, super sweet and super delicious!

Unlike the traditional pancake, the Sri Lankan pancake is quite thin. A mixture of sugar and coconut is wrapped within the pancake and this is what makes it truly quite remarkable! This mixture, which is called pani pol is what is found inside the exotic ‘lavariya’ too, which is yet another popular local delicacy.

You will need flour, egg, baking powder, salt and coconut milk to prepare the pancake. You can even add a pinch of turmeric to the mixture to give the pancake its characteristic colour. Once the batter is made, you can strain it so that the pancakes you make will be smooth. The pancake, as mentioned earlier is prepared to be rather thin so that is can be used as a great wrap.

The filling is made using coconut, brown sugar, cardamom as well as salt and pepper. The sugar is mixed with water and boiled on a medium heat. The rest of the ingredients are added to the sugary mixture and combined well. The filling is then rolled neatly inside the soft pancakes.
