Unlike the traditional pancake, the Sri Lankan pancake is quite thin. A mixture of sugar and coconut is wrapped within the pancake and this is what makes it truly quite remarkable! The filling is made using coconut, brown sugar, cardamom as well as salt and pepper. The sugar is mixed with water and boiled on a medium heat. The rest of the ingredients are added to the sugary mixture and combined well. The filling is then rolled neatly inside the soft pancakes.
